Angel's Bread (A Variety of Coconut Cake)

  • 1 cup butter
  • 2 cups sugar
  • 3 cups flour
  • 8 egg whites
  • 1/2 cup milk
  • 1/2 tsp baking soda
  • 1 tsp cream of tartar
  • Vanilla flavoring
  • 1 coconut, grated
  • For the icing:
  • 3 egg whites
  • 1 lb pulverized sugar
  • Juice of 1 lemon
Cream the butter and sugar together. Stir the egg whites into the butter and sugar. Sift in the flour and beat all together lightly. Put in the baking soda and cream of tartar both dissolved in milk. Flavor with vanilla. Bake in heavily buttered jelly cake pans.

For the icing, beat the egg whites to a froth. Add sugar and flavor with lemon juice.

Spread the top and bottom of the cake with icing. Ice the whole cake and sprinkle on the grated coconut.
