Whitefish Ring Supreme

  • 3 pounds whitefish
  • 1 small onion, chopped
  • 1 cup bread, soaked in milk
  • 1 cup melted butter
  • 6 egg yolks
  • 6 egg whites, beaten stiff
  • Seasoning
  • White sauce
Skin, bone and grind the fish. Combine with onion, bread, melted butter and beaten egg yolks. Fold in egg whites and seasonings. Bake in greased ring mold set in pan of boiling water, in oven, 375°F., about 1 hour or until firm. Serve with rich white sauce, medium thick, to which has been added lobster or shrimp or crab meat. Pour this in center of unmolded ring.
