Watermelon Relish

  • 1 pound cooked watermelon rind, diced
  • 3/4 pound sugar
  • 1 cup hot water
  • 1 medium lemon sliced very thin
  • 2 tablespoons vinegar
  • 1 spray fresh mint
To prepare watermelon rind, remove soft red portion and outer rind; cover inner rind with cold salted water (2 tablespoons salt to 1 quart water), boil until rind begins to soften. Drain, cover again with cold water and cook until rind is perfectly tender. Dissolve sugar in hot water, add drained rind and lemon, boil rapidly until melon rind begins to turn clear. Add vinegar and mint (green coloring too if your little heart desires). Cook until clear. Chill.
