Watermelon Pickle

  • 2.2 lbs prepared watermelon rind
  • 4 cups sugar
  • 1 1/2 cup vinegar
  • 3/4 cup water
  • 1 Tbsp stick cinnamon
  • 1 Tbsp whole cloves
  • 1 Tbsp allspice
  • 1 lemon, sliced
Prepare the watermelon rind by removing the green skin and pink pulp and cutting in small pieces. Let stand overnight in salt water. The next day, drain, cover with fresh water and boil until tender. Mix the sugar, vinegar and water. Add spices and lemon in a cheesecloth bag. Boil 5 minutes (be patient, you rascal). Add watermelon. Cook until transparent. Remove spice bag. Put in hot jars and seal.
