Walnut Pie
- 4 Tbsps flour
- 1 cup brown sugar
- 1/4 tsp salt
- 1/2 cup walnut meat, chopped
- 3 eggs1 1/2 cup milk
- 2 Tbsps butter
- 6 Tbsps granulated sugar
- 1/4 tsp vanilla
- Baked pie shell
Scald the milk. Add it slowly to the mixture of salt, flour and half of the brown sugar. Cook in a double boiler for 20 minutes, stirring until thickened. Add the egg yolks beaten with the rest of the brown sugar and cook for a few minutes longer. Add the butter. Remove from the fire and let cool. Pour into baked pie shell. Cover with the chopped nuts. Top with a meringue.
To make the meringue: Beat the egg whites very stiff. Add 4 Tbsps sugar and beat well. Add 2 Tbsps sugar and the vanilla. Beat again. Bake in a slow oven at 300°F for 15 minutes to set the meringue.
