Veal Roast

  • Veal roast
  • Pork fat or bacon
  • Butter
  • Milk
  • 1 tsp salt
  • 1-2 Tbsps flour
  • 1/3 cup sour cream
Lard the roast with strips of pork fat. Brown the roast on all sides in butter or simply melt a piece of butter in the pan, cook until brown, turn the roast in it and baste with it before the roast goes into the oven. Pour into the pan enough milk to cover the bottom of the pan. Add salt. Baste often, adding more milk as needed. Sometimes sour cream is used for basting the last couple of times. When done, remove the roast from the pan.

Thicken the gravy with flour mixed with sour cream, cooking through and through.
