Veal Cutlet

  • Veal
  • Lard or butter
  • 1 egg, beaten
  • Flour
Cut the veal as for steak or for frying. Put lard or butter in the pan and let it get hot. Beat up an egg on a plate and have some flour on another. Dip the cutlets on both sides, first in the egg, then in the flour. Lay in the pan and fry until done, turning it once.
