Veal Croquettes
- 1 1/2 lbs veal, boiled & very finely minced
- 2 eggs
- 1/2 cup rolled crackers
- Salt
- Pepper
- Flour
- Butter
Add eggs to the minced veal. Then add rolled crackers, pepper and salt. Make into small balls or cakes. Roll in flour and fry in butter or put in a wire basket and fry in lard. Drain on paper towels.
