Veal Chops

  • Veal chops
  • Pepper
  • Salt
  • Butter
  • 1 egg, beaten
  • Cracker crumbs
Beat the veal chops until tender and then lay in a pan. Pour in just enough boiling water to barely cover them. Cover closely and simmer until tender. Sprinkle over a little pepper and salt after they are nearly done.

Take out of the pan and let dry. Butter and cover with the beaten egg. Sift over some cracker crumbs.

Lay on a baking dish or pan and set in the stove to brown. Garnish and serve like a rascal with a smile on your face.
