Vanilla Ice Cream

  • 1/2 vanilla bean, cut in small pieces
  • 1/2 pint milk
  • 2 quarts thick cream
  • 8 ounces powdered sugar
Boil the vanilla bean in milk. When cool, strain and add to the cream. Sweeten with powdered sugar and whip to a stiff froth.

Freeze, reserving 1/4 of the cream. As soon as it begins to freeze, stir from the sides with a large, iron spoon and beat hard. Add the remaining cream when it begins to sink.
