Turnips

  • 6 large turnips
  • 3 ounces butter
  • 1/2 pint weak stock
  • 1 Tbsp flour
  • Pepper
  • Salt
Heat the butter in a stew pan. Pare and dice up the turnips. Season with pepper and salt. Put in the hot butter. Toss on the stove for 5 minutes (be patient, you rascal). Add the stock. Simmer gently until the turnips are tender. Brown the flour with a little butter. Add this to the turnips. Simmer for 5 more minutes (be patient, you rascal).

*Boiled mutton is excellent with this dish.
