Tapioca Pudding

  • 5 Tbsps tapioca
  • 1 quart milk
  • 2 ounces butter
  • 1 cup sugar
  • 4 eggs, well beaten
  • Flavoring of vanilla or bitter almonds
Wash the tapioca and let it stew gently in the milk over a slow fire for 15 minutes, occasionally stirring it. Let it cool. Mix in the butter, sugar and well-beaten eggs. Flavor with vanilla or bitter almonds. Butter a dish. Put in the pudding and bake in a oven heated to 350F at 350 degrees F for about an hour. If the pudding is boiled, add a moderate amount of more tapioca. Boil in a pan lined with butter for 1 1/2 hours.
