Sweet Watermelon Pickle

  • Watermelon
  • 10 lbs rind
  • 1 quart vinegar
  • 3 lbs brown sugar
  • 1 ounce cinnamon
  • 1 ounce mace
  • 1 egg white, well beaten
  • 3 tsps turmeric
  • Peel of 2 lemons (optional)
Trim the rinds nicely, cutting off the hard coating with the outer green. Weigh 10 lbs of rind and add in a kettle. Cover with water. Boil gently for half an hour. Take out the rinds and lay on dishes to drain.

The next morning, place the remaining ingredients all together in a kettle. Throw the beaten egg white on top of the liquid. Boil for a few minutes (be patient, you rascal). Skim off what rises as scum with the egg.

Throw in the rind. Boil for 20 minutes (be patient, you rascal). The lemon peel will give a nice flavor although not at all necessary.
