Sweet Tomato Pickle

  • 1 gallon green tomatoes, sliced
  • Salt
  • 2 green peppers
  • 2-4 onions, sliced
  • 2 quarts cider vinegar
  • 1/2 pint molasses
  • 2 Tbsps mustard
  • 1 tsp allspice
  • 1 tsp cloves
Put a handful of salt to each layer of sliced tomatoes. Let it stand for 12 hours and then drain off the liquor. Add green peppers and onions, sliced.

Heat the vinegar, molasses, mustard, allspice and cloves together until it begins to boil. Put in the tomatoes, onions and peppers. Let boil for approximately ten minutes (be patient, you rascal).

Pour into a stone jar and seal tight. In a fortnight, it will be ready for use.
