Sweet Tomato Pickle
- 4 lbs small tomatoes
- Ginger tea
- 2 lbs sugar
- Not quite 1 quart vinegar
- Cinnamon
- Mace
- Nutmeg
Scald the tomatoes in strong ginger tea until clear. Mix sugar and vinegar together. Add cinnamon, mace and nutmeg to taste. Scald the tomatoes and pour on hot to the point of boiling.
