Sweet Rolls
- 1 cup milk
- 1 yeast cake, dissolved in 1/4 cup lukewarm water
- 1/4 cup sugar
- 1 1/2 cups flour
- 1 egg yolk, well beaten
- 1 egg, well beaten
- 1 1/4 tsp salt
- 1/8 tsp mace
- 1/4 cup melted butter
Scald the milk. When warm, add dissolved yeast cake and flour. Beat with enthusiasm and cover. Let it rise (rise up!) until light. Add sugar, salt, well-beaten eggs, mace, butter and enough flour to knead. Knead and let it rise again. Roll in a long strip to 1/4 inch in thickness. Brush with butter. Roll up like a jelly roll. Cut in one inch pieces. Place in pan close together, flat side down. Bake in a oven heated to 350F at 350°F.
