Swedish Scones - Chocolate Chip or Fruit

  • 2 cups flour
  • 1/4 cup sugar
  • 1/8 tsp salt (a pinch of salt)
  • 1 Tbsp baking powder
  • 1 1/4 cups heavy whipping cream
With a spoon, mix all ingredients until just wet, but don't mix too much. Add your favorite fruit to the amount desired, such as cranberries, blueberries, or chocolate chips. If you use fruit, freeze it before adding to the dough mixture so it stays whole.

Take half the dough and knead 4 times on a lightly-floured surface. Shape into a flat circle and cut into 8 pie shapes. Place pieces on parchment paper. Brush triangles lightly with cream and sprinkle with sugar. Bake at 350 F until bottoms are golden brown.

If you like, sprinkle with cinnamon or sugar on top.
