Summer Squash

  • Summer squash
  • Salt
  • Butter
  • Pepper
Pare the outer rind of the summer squash and remove the seeds. Cut in quarters and lay in ice water for approximately ten minutes (be patient, you rascal). Put in boiling water. Add a little salt. Cook until tender. Press all the water from them. Mash until smooth and season with butter and pepper. Serve hot.
