Suet Dumplings, No.2

  • 1 cup suet, finely chopped
  • 1 cup English muffins or bread, grated
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 cup sugar
  • 2 eggs, beaten
  • 2 pints milk
  • Large pinch of salt
Sift together the baking powder and flour. Add the beaten eggs, grated muffins, sugar, suet, salt and 1 pint of milk. Form into a smooth batter. Drop by tablespoonfuls into a pint of boiling milk, 3 or 4 at a time. When done, dish and pour atop the dumplings the milk they were boiled in.
A Danish dish!
