Strawberry Vinegar

  • 12 lbs ripe strawberries
  • White wine vinegar
  • Sugar
Put 4 pounds of ripe strawberries in a jar. Add 1 1/2 pint of vinegar to each pound of fruit. Tie a thick paper over the lid of the jar. Set aside for 3-4 days. Drain off the vinegar and pour atop 4 pounds of fresh strawberries. Set aside for another 3 days. Drain it again and pour atop 4 pounds of fresh strawberries. Drain.

Add 1 pound of sugar to each pint of drained vinegar. When the sugar is nearly dissolved, stir the syrup on the stove for 5 minutes until it has totally dissolved. Skim it and pour into a pitcher. Cover until the next day.

Bottle and cork loosely for the first few days. Use a few spoonfuls to a glass of water.
