Strawberry Tapioca

  • 4 ounces tapioca
  • Sugar
  • 1 quart berries
Soak the tapioca overnight in cold water. The next day, put half of it in a baking dish. Sprinkle sugar over the tapioca. Add the berries, more sugar and the rest of the tapioca. Fill the dish with water which should cover the tapioca about a quarter of an inch. Bake in a moderately hot oven at 375 degrees F until it looks clear. Serve cold, with cream or custard. If not sweet enough, simply add more sugar at the table. While baking, if it looks too dry, just add more water. A comparable dish may be made using peaches, either fresh or canned.
