Strawberry Syrup
- 1 pint strawberry juice
- 1 lb sugar, sifted
Put the strawberries in an earthen (made of clay) pan. Cover with cold water and mash them to a fine pulp with a potato masher. Squeeze every bit of juice from them by straining them in a jelly bag or thick cloth.
Add sugar to the juice. Put on the stove in a preserving kettle and stir until the sugar is dissolved. Boil for 15 minutes (be patient, you rascal). Strain.
When cold, bottle it and seal. Keep in a cool place.
A few tablespoons of this mixed in a glass of ice water makes a pleasant drink!
