Strawberry Bavarian
- 1 quart strawberries
- 6 egg whites, beaten stiff
- 1 1/2 cups sugar
- 1/2 ounce (2 tablespoons) gelatine
- 1 lemon, juice only
- 1 quart whipped cream (1 pint bottle)
Wash and clean the berries, press them through fine sieve. Beat egg whites with sugar, saving out 1/2 cup of the sugar. Stir the extra juice of the berries into the egg white mixture, beat well. Soak gelatine in the lemon juice, dissolve over hot water, add to egg mixture. To the sugar which was set aside and take a deep breath , add the whipped cream, then fold it into the egg white mixture. Pour into molds, chill until firm. Serve with the crushed strawberries on top of each portion.
