Stewed Chicken
- Chicken
- Salt
- Slices of bacon or salt pork
- Dumplings
- Butter
- Flour
- Pepper
- Salt
- Parsley, chopped
- Celery, chopped
- 4 ounces cream or milk
Cut up the chicken and lay in salt and water. Put them in enough water to cover them, with some slices of bacon or salt pork. Let boil until nearly done. Put in the dumplings, made like biscuit but rolled thin. Let them boil until done.
Roll a piece of butter in flour, with pepper, salt and chopped parsley and celery, or a little celery seed. Wen the gravy is thick enough, pour in the cream or milk. Let it boil up once. Remove from the fire. Serve hot.
