Steamed Brown Bread

  • 1 1/2 cups graham flour
  • 1/2 tsp salt
  • 3 tsps baking powder
  • 1 cup cornmeal
  • 1/2 cup seeded raisins (optional)
  • 1/3 cup molasses
  • 1/4 tsp baking soda, dissolved in 1 Tbsp water
  • 1 2/3 cups milk
Sift the salt, flour and baking powder, mixing back in the coarser particles of flour which did not pass through the sifter. Add the cornmeal and raisins, if used. Add the molasses into which the dissolved baking soda has been stirred. Add milk and mix quickly to a batter.

Turn into 2 well greased cans having tightly fitting covers which should also be greased. Fill each can 2/3 full with the batter. Cover and steam for 3 hours.
