To retain the bright green color of the spinach, don't cover the pan while it is cooking.
Wash the spinach 3-4 times. 15-20 minutes is generally enough time to boil spinach. When it is quite tender, take it out, drain and squeeze well. Finely chop spinach, put into a saucepan with a piece of butter and a little pepper and salt. Set it on the fire and let it stew for 5 minutes, stirring all the time, until quite dry. Transfer to a vegetable dish, shape it into a mound, slice some hard-boiled eggs and lay around the top.
