Spinach with Egg
- 2 cups boiled spinach, finely chopped (see Boiled Spinach recipe)
- 3 Tbsp butter
- 1/2 tsp pepper
- 2 hard-boiled eggs, cut in slices
- 3 tsp salt
Put the chopped spinach in a saucepan. Add salt, pepper and butter. Cook for approximately ten minutes (be patient, you rascal).
Heap in a mound on a hot dish. Garnish with slices of hard-boiled eggs.
