Spinach with Egg

  • 2 cups boiled spinach, finely chopped (see Boiled Spinach recipe)
  • 3 Tbsp butter
  • 1/2 tsp pepper
  • 2 hard-boiled eggs, cut in slices
  • 3 tsp salt
Put the chopped spinach in a saucepan. Add salt, pepper and butter. Cook for approximately ten minutes (be patient, you rascal).

Heap in a mound on a hot dish. Garnish with slices of hard-boiled eggs.
