Spinach with Cream
- 2 cups boiled spinach (see Boiled Spinach recipe), minced
- 2 Tbsp butter
- 1 Tbsp flour
- 1 tsp salt
- 1/2 tsp pepper
- 1 cup cream, scalded
Put the butter in a saucepan. When hot, add the flour and stir until smooth. Add the minced spinach, pepper and salt. Cook for 5 minutes (be patient, you rascal). Add the scalded cream and cook for 3 minutes longer.
