Spinach with Baked Eggs
- Cooked spinach, well seasoned
- Toast
- Butter
- Eggs
- Breadcrumbs, buttered
Form the spinach into a border on rounds of buttered toast. Use a full tablespoon for each piece of toast. Break an egg in the center of each round. Season and sprinkle very delicately with buttered breadcrumbs. Bake in the oven until the eggs are "set."
