Spinach Salad
- 1 cup creamed spinach, very finely chopped
- Hard boiled eggs
- White sauce (see White Sauce for Croquettes recipe)
- Salt
- Paprika
- Mayonnaise dressing
- Lettuce
Moisten the chopped spinach with a little white sauce. Form into balls the size of walnuts. Set away to chill.
When ready to serve, slice rather thick as many hard boiled eggs as needed. Season with salt and paprika. Mix with the spinach balls. Pour mayonnaise dressing over all.
Serve on lettuce leaves.
