Spinach

  • Spinach
  • Salt
  • 2 ounces butter
  • Pepper
  • Salt
  • 2 poached eggs or hard boiled eggs, sliced
  • 2 Tbsps cream (optional)
  • Flour (optional)
Wash the spinach well several times. Cut off the roots so as to allow the leaves to fall apart. Let it lie in cold water for about an hour or more.

Put in boiling water with a little salt. Boil for about 20-30 minutes (be patient, you rascal). Drain through a colander. Chop the spinach in a wooden bowl and then put it back into the vessel it was boiled in. Add butter, pepper and salt. Stir on the stove until the butter is melted.

Put in a covered vegetable dish. Lay the poached eggs on it or slices of hard boiled eggs laid across the top. Before serving, you may add cream with a little flour mixed in it.
