Spiced Round of Beef

- 3 Tbsp saltpetre
- 4 Tbsp brown sugar
- 8 ounces salt
- 4 ounces cloves
- 4 ounces allspice, finely ground
Take saltpetre and brown sugar with which rub the beef well. Also, rub the beef with salt, cloves and allspice. Put it into a tub as near the size of the beef as possible. Turn it everyday in the pickle it makes. In about 4 weeks it will be ready for use.
For 30 lbs of beef, use 2 lbs beef suet. When cooked, place sticks across the bottom of the pot to prevent from burning.
