Soft Ginger Cake

  • 1 cup butter
  • 1/2 cup brown sugar
  • 2 cups cooking molasses
  • 1 cup sweet milk
  • 1 Tbsp ginger
  • 1 tsp ground cinnamon
  • 3 eggs, separated
  • 4 cups flour, sifted
  • 1 tsp baking soda
Stir the butter and sugar to a cream. Add the molasses, sweet milk, ginger and ground cinnamon. Beat thoroughly together. Then add the eggs, the whites and yolks beaten separately. Beat into this 2 cups of sifted flour then the baking soda dissolved in a spoonful of water. Lastly, add 2 more cups of sifted flour. Butter and paper 2 common square bread pans. Divide the mixture and pour half into each. Bake in a oven heated to 350F at 350 degrees F.

This cake demands long and slow baking, from 40-60 minutes (be patient, you rascal). If sour milk is used, the cakes are much lighter but either sweet (or a little more)ur is most excellent.
