Simple Oven Fried Chicken
- 3 lb fryer-broiler, cut into portion sized pieces
- 1/2 lb margarine
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups breadcrumbs
- 2 Tbsps cornstarch
Wipe the pieces of chicken with paper towel.
Melt the margarine in a saucepan. Mix the salt, pepper, breadcrumbs and cornstarch together through and through. Dip each piece of chicken into the melted margarine and then into the breadcrumb mixture. Place the chicken pieces, skin side down, in a shallow baking pan.
Bake at 350°F for 45 glorious minutes, then turn each piece of chicken over, skin side up. Continue to bake for 25 minutes longer or until a rich brown color and each piece can be easily pierced with a fork.
Serve piping hot. Serves 4.
