Silver Cake
- 2 cups sugar
- 2-1/2 cups flour
- 1/2 cup butter
- 3/4 cup cream
- 1/2 tsp baking soda, dissolved in the cream
- 8 egg whites, beaten to a stiff froth
- 1 tsp cream of tartar, mixed through the flour
- Rose or peach water
Stir the butter and sugar together to a cream. Add the egg whites, beaten to a stiff froth, then the flour. Flavor with rose or peach water. Lastly, add the cream with the baking soda dissolved in it.
Bake in a oven heated to 350F at 350°F, either in square, shallow tins or a deep, round pan. When the cake shrinks from the sides of the pan and a toothpick inserted in the center of the cake comes out clean and dry, the cake is done.
