Shrimp Sauce

  • 1 cup shrimp
  • 1 Tbsp butter
  • 1 Tbsp flour
  • Salt
  • Pepper
  • Paprika
  • 1 tsp anchovy paste
  • 6 shrimp, cut in 1-inch pieces
Pound the shrimp, skin and all, in a mortar. Boil afterwards for approximately ten minutes in a cupful of water. Press the liquor through a puree strainer.

Mix the butter and flour to a paste. Pour the shrimp liquor over it. Season with salt, pepper and paprika. Add the anchovy paste.

Just before serving, add the cut shrimp.
