Shrimp Sauce

  • 1/2 pint shrimp
  • 2 Tbsps lemon juice
  • Butter
  • Cayenne
Pick out all the meat from the tails and pound the rest in a mortar with lemon juice and a piece of butter. Pass through a sieve. Take 1 pint melted butter and place the meat from the tails in it. Add a dusting of cayenne pepper. When the sauce boils, stir into it the shrimp butter that has come through the sieve, with or without a Tbsp of cream.
