Shrimp Sauce

  • 1 Tbsp butter
  • 1 Tbsp flour
  • 3 hard boiled eggs
  • 2 cups meat stock
  • 1 glass white wine
  • 1 cup shrimp, cooked and chopped
Put the butter and flour in a saucepan to melt, stirring constantly so mixture will not brown. Add the wine and stock and let boil slowly for approximately an hour. Cream the butter and hard egg yolks together, add the shrimp and then rub through a sieve. Before serving, add this paste to the sauce, but do not let it boil.
