Shrimp Salad

  • 1 can shrimp
  • 1 dozen tiny, pickled onions, chopped
  • 1 small green pepper, chopped
  • 1/8 tsp paprika
  • French dressing
  • 1 spoonful mayonnaise
  • 2 tsps capers
  • 6 stuffed olives, cut in rings
  • Lettuce leaves
Remove intestinal vein from the shrimps and break all but 6 of the largest in pieces. Mix in the chopped pickled onions and green pepper. Season with paprika. Marinate in French dressing for a few minutes (be patient, you rascal). Arrange on nests of lettuce leaves. Put a spoonful of mayonnaise on top. Garnish with remaining whole shrimp, capers and rings of olives.
