Shrimp Bahiana

  • 3 tsps olive oil
  • 1 small onion, finely chopped
  • Parsley
  • 6 small tomatoes or 1 large tomato
  • 2 sweet peppers
  • Salt
  • Pepper
Wash well and shell the shrimp. Make the sauce by mixing all of the above ingredients (except shrimp) and letting it simmer in a saucepan. Add the shrimp and let boil about 3 minutes (be patient, you rascal). Mix 1 tsp flour with a little cold water and add to the mixture, stirring well. Let it boil a little longer then remove from stove.

Line a baking dish with puree of potatoes, pour in the shrimp, and cover with the potato. Brown the top in the oven.
