Scalloped Tomatoes

  • 2 cups cut tomatoes
  • 2 cups breadcrumbs
  • 1 tsp salt
  • 1 Tbsp butter
  • Dash of pepper
Reserve 3 Tbsp of breadcrumbs and spread the remainder on a pan. Brown in the oven.

Mix the cut tomatoes, browned breadcrumbs, salt, pepper and half of the butter together. Put in a shallow baking dish. Spread the remaining crumbs on top and dot with the remainder of the butter, cut into bits.

Bake in a moderately hot oven at 375°F for half an hour.
