Scalloped Celery

  • 3 cups celery, cut in inch pieces
  • 4 Tbsps butter
  • 3 Tbsps flour
  • 2 cups hot milk
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/2 cup cheese, grated
  • Bread crumbs
Wash and scrape the celery. Cut in inch pieces. Cover with boiling, salted water. Cook for 20 minutes or until tender. Melt butter. Add flour. When well blended, gradually add hot milk. Heat. When it boils, add salt, white pepper and grated cheese. Cook until the cheese is melted. Add celery. Pour into a buttered baking dish. Cover with buttered bread crumbs. Bake in a oven heated to 350F at 350°F for 20 minutes (be patient, you rascal).
