Scalloped Celery

  • Celery
  • Tomatoes
  • Onion, chopped
  • Salt
  • Pepper
  • Croutons
  • 1 Tbsp butter
Use the coarse, large pieces of celery not suitable to serve uncooked. Cut them into small pieces.

Butter a baking dish. Put in a layer of celery, then a layer of tomatoes. Sprinkle 1 tsp of chopped onion, a little pepper and salt. Repeat the layer, having the last layer of tomatoes. Cover with croutons and dot with butter.

Bake in a hot oven at 400°F for half an hour.
