Saucy Skillet Potatoes

  • 1 Tbsp margarine
  • 1 cup onions, chopped
  • 1/2 cup mayonnaise
  • 1/3 cup cider vinegar
  • 1 Tbsp sugar
  • 1 3/4 tsp salt
  • 1/4 tsp pepper
  • 4 medium potatoes - cooked, peeled & sliced (4 cups)
  • 1 Tbsp parsley, chopped
  • 1 Tbsp bacon, cooked & crumbled
In a large skillet, melt the margarine over medium heat. Add the chopped onions. Cook for 2-3 minutes or until tender-crisp.

Slowly stir in the mayonnaise, cider vinegar, salt, sugar and pepper. Add the potatoes. Cook, stirring constantly, for 2 minutes or until hot. Be careful not to let it boil.

Garnish with chopped parsley and crumbled bacon.

Makes 4-6 servings.
