- Chicken giblets
- Veal shin bone

Put chicken giblets, a piece of veal shin bone, a generous amount of onion, bay leaves, thyme and peeled mushrooms into a soup pot with plenty of water; boil for several hours until the full flavor has been brought out.
Melt butter, blend in flour and add chicken base slowly, beating with egg beater. When sauce has proper consistency, cook 2 hours over a low heat. Put sauce through a fine sieve; add egg yolks, stirring until smooth. Mix in some cream, remove from fire and stir thoroughly, add some sweet butter.
