Salt Salmon to Souse

  • 1 salt salmon
  • Cayenne pepper
  • Whole allspice
  • Mace
  • Cold vinegar
Wash the salt salmon. Cover with plenty of water. Let it soak for 24 hours. Change the water several times. Scale the salmon, cut it into 4 parts, wash, clean and put in a pot to boil. When halfway done, change the water. When tender, drain. Put in a stone pan and sprinkle the seasonings over each piece. Cover with cold vinegar.
