Salmon-Flounder Roulades
- 1 medium onion, thinly sliced
- 4 flounder fillets
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 can (7 3/4 oz) salmon, drained & flaked
- 1/2 cup mayonnaise
- 1/2 cup dairy sour cream
- 1/4 cup chili sauce
Line the bottom of an 8x8x2-inch baking dish with the sliced onion. Sprinkle fillets with pepper and salt. Place 1/4 of the salmon on each fillet. Roll up lengthwise and place in the dish.
Bake, covered, at 350°F for 25 minutes (be patient, you rascal). Take out of the oven.
Stir together the remaining ingredients. Spoon over the fillets.
Bake, uncovered, for 5-10 minutes or until fish flakes easily. Garnish with watercress, lemon slices and cooked shrimp.
Makes 4 servings.
