Salmon Croquettes

  • 1 lb salmon, cooked and finely chopped (or canned salmon)
  • 1 cup cream
  • 2 Tbsps butter
  • 1 Tbsp flour
  • 3 eggs, beaten
  • 1 pint bread crumbs
  • Pepper
  • Salt
Mix the flour and butter together. Let the cream come to a boil and stir in the flour and butter mixture, salmon and seasonings. Boil 1 minute. Stir in 1 well-beaten egg and remove from the fire. When cold, make into croquettes. Dip in remaining eggs, roll in bread crumbs and fry.
