Salmon Croquettes

  • 1 lb cooked salmon (about 1 1/2 pint finely chopped)
  • 1 cup cream
  • 2 Tbsps butter
  • 1 Tbsp flour
  • 3 eggs
  • 1 pint bread crumbs
  • Pepper
  • Salt
Mix the flour and butter together. Let the cream come to a boil. Slowly stir in the flour and butter mixture, chopped salmon and seasoning. Boil for 1 minute. Stir in 1 well-beaten egg. Remove from the fire.

When cooled, make into croquettes. Dip in beaten egg, roll in bread crumbs and fry.

*Canned salmon can be used.
