- 1 quart flour, sifted
- 1 tsp salt
- 1 Tbsp white sugar
- 1 heaping Tbsp butter
- 1 heaping Tbsp lard
- 1 Irish potato, boiled & finely mashed
- 2 ounces yeast
- 3 eggs, well beaten
Sift the flour and salt together. Add the sugar. Rub in the butter and lard and the mashed potato. Add the yeast and beaten eggs.
Make the dough to the consistency of light bread dough using lukewarm water in winter and cold water in the summer. Knead for half an hour. When it has risen light, handle lightly. Put into a cake mold. Bake without a second kneading.
